Easy gluten free meal ideas

Cooking tasty meals for all the family if one of you has coeliac disease can be tricky. But it doesn’t have to be! Check out my easy gluten free meal ideas for some inspiration.

Teriyaki Chicken Bowl

This teriyaki bowl was super easy to make but tasted so so good! To make the teriyaki chicken I chopped up some chicken breasts and marinaded in some gluten free soy sauce and honey before frying.

To accompany I chopped up a load of courgette, celery, red pepper, baby corn and mange tout and stir fried with just a bit of tomato puree added in. I served with plain long grain rice and drizzled over the leftover teriyaki sauce.

Not going to lie, this was probably the best thing I’ve ever cooked!

Tuna steak with warm salad

I was quite proud of this creation over the summer. But I see no reason why it can’t be enjoyed all year round.  Tuna steak with warm salad of mixed leaves, asparagus, olives and tomatoes. And some new potatoes plonked round the side. Lush!

This is also dead easy. I seasoned the tuna steaks with olive oil and pepper before frying in a griddle pan for a couple of minutes on either side. I whacked the asparagus in the same pan before lobbing them in with the rest of the salad ingredients and simply boiled the potatoes.  Job done! A healthy, delicious meal ready within minutes.

Mid-week roast

Who said roasts were just for Sundays? Smash the mid-week blues with this easy weekday roast. Everything goes in the oven and there’s barely any prep.

Whack a whole chicken in to roast as soon as you get back from work then chop up whatever veggies you have lying around for roasting. Here we went for peppers, courgette and tomato. While you’re at it chop up some sweet potato into chunks for an easy alternative to roast potatoes. I love sweet potato. It’s so versatile and is equally delicious made into fries or wedges. Once your chicken’s done stick the veg and sweet potato in for around half an hour and you’re good to go!

The best bit is there’ll be chicken leftover for sandwiches so your lunch for tomorrow is sorted too.

Beef stir fry

Easy meals don’t come much easier than a stir fry. As such it’s a bit of a staple favourite of mine! I usually chop up my own veggies to use but of course if you’re feeling extra lazy you can use a pre-prepared packet of stir fry veg.

Normal noodles contain gluten but rice noodles are usually coeliac-friendly (of course, always check the label before buying though!), meaning a stir fry is most definitely a solid gluten free choice.

Pictured here is a beef stir fry using Amoy Straight to Wok Rice Noodles and Celebrate Health Chinese Beef Stir Fry sauce (both labelled gluten free, and both delicious). If I don’t have a packet of sauce to hand then gluten free soy sauce is a good substitute. Can’t go wrong.
